FIG AND TOMATO SALAD

I could not decide if I wanted a sweet or salty snack so I made this quick and amazing salad which satisfied both desires. Eating whole food, plant-based does not need to be difficult. Thanks to my husband and a generous patient I had a bounty in my garden. This dish is a chopped garden tomato, two sliced basil leaves, and two chopped dried figs sprinkled with balsamic vinegar and a bit of Himalayan salt. If you don't like figs or don't consider figs vegan, substitute with your fruit of choice.

I made broad strips when slicing my basil. See my 1 minute video at the bottom of the link to learn how to chiffonade basil.

I am a whole food, plant-based vegan and enjoy figs. Here is an article about the debated topic as to whether figs are vegan or not.
