SPAGHETTI WITH FRESH TOMATO SAUCE
I intended to make a lasagna today but then had a streak of laziness so changed my mind. This recipe was easier and was perfect for using up the large number of tomatoes from my garden. My family enjoyed this dish.

What are some common nightshades?
-Tomatoes
-Potatoes
-Peppers
-Eggplant
-Okra
What's the problem? Nightshades contain "alkaloids" which defend the plants against bacteria, fungi, viruses, and insects. In humans these alkaloids can potentially cause adverse reactions or toxicity. The type and amount of alkaloids present varies depending on the plant and other factors. If you have a healthy gastrointestinal tract the alkaloids are not well absorbed.
What I did differently:
-Dry sautéed the onion and garlic together and did not use oil
-Used red wine
-Simmered for 30 minutes and turned off heat. Added 2 cups of torn fresh spinach.
-Used Penne Einkorn whole wheat pasta (ancient wheat) instead of spaghetti
-I did not add plain basil leaves at the end. Instead I added a half batch of Garlic Basil Vegan Ricotta “Cheese” Spread. What I did differently for my half batch: omitted the oil, used 3 TBSP water, and instead of garlic powder I added 2 cloves garlic. I didn't like the look of the tiny white "cheese" pieces so next time I will process it to be smoother.
