APPLE BREAD
I love it when it's that time of year for everything apple! This bread is delicious fresh out of the oven or toasted later. By the time I shared it with my neighbors it was gone by the next day. Total yum!
The recipe is by Chef Elena at “VegeVega”: Easy Healthy Whole Food Plant-Based Apple Bread. I used measuring cups rather than a scale for measurements so if you want to use a scale go to her recipe page.

Easy Healthy Whole Food Plant-Based Apple Bread
Wet Ingredients
2 large apples or 3 small, peeled and grated (I used 2 1/2 large apples which after grating was 2 full cups)
1/4 cup coconut sugar (I used date sugar instead)
3 Tablespoons ground flax seeds
1/4 cup applesauce
1 1/2 teaspoons vanilla extract
1/4 cup raisins
1/4 cup finely chopped dates, about 3 large dates (I used Medjool dates)
Dry Ingredients
3 cups oat flour (Because I used date sugar I lowered the flour to 2 1/2 cups)
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon salt
Optional Add Ins: 1/3 cup chopped nuts (I used walnuts)
Instructions
Preheat oven to 350 F. Peel apples and grate using the large holes of a box grater, discarding the cores and the seeds. Place grated apples in a small mixing bowl with 1/4 cup coconut sugar and stir around together. Let apple/sugar mixture sit 15 minutes, stirring around every few minutes (don’t discard the apple juice that comes out of the apples).
In a large mixing bowl, combine all ingredients listed under “Dry Ingredients”
Add all remaining ingredients listed under “Wet Ingredients” to the apple/sugar mixture and stir to combine.
Combine wet ingredients with the dry, and stir around until combined.
Fold in the nuts if using.
Pour dough mixture into a non-stick or silicone loaf pan (I didn’t have either so lined with parchment paper), press mixture down with hands or back of a spoon, then bake in oven 55-65 minutes (Mine took 47 minutes). The apple bread should be golden brown and a toothpick inserted in the center should come out clean.
Remove from the oven and let sit in loaf pan 10 minutes. Then remove bread from pan and let cool completely before slicing. (I removed it immediately since I was able to lift the bread by the parchment paper and placed it on a cooling rack)
