APPLE CIDER DONUTS
My daughter requested these donuts for her birthday. I wanted her to eat the first donut but I forced myself to try it first so I could make sure they were good. The recipe is easy and delicious but of course they don't have the density of fried donuts.
The recipe is by “My Darling Vegan”: BAKED VEGAN APPLE CIDER DONUTS
My daughter’s birthday is around the holidays which is a great time to reflect and be grateful. I love this book by John Bucchino called “Grateful, A Song of Giving Thanks” sung by Art Garfunkel: Grateful - A Song of Giving Thanks (audio)
What I did differently:
-Used 1 cup fine oat flour in place of all-purpose flour
-Used cardamom instead of allspice
-Reduced salt to 1/4 tsp
-Used more apple sauce in place of coconut oil
-Peeled and diced 1/2 Honey Crisp apple. After small dice it measured nearly 1 cup and folded it into the dough
-Made 12 small donuts. Baked 18 minutes. Let cool in pan 1 minute then removed and placed on wire cooling rack
-Did not use powdered sugar for the glaze. Used a pastry brush to apply plain apple cider before dipping the donut into the cinnamon sugar topping
-For the cinnamon sugar topping used coconut sugar in place of more processed sugar. I only made 1/2 batch.
