BADASS BANANA BREAD (ENGINE 2)

Banana bread and muffins are easy to make so are a great place to start if you are not used to baking. There is no reason to use unhealthy ingredients such as oil and eggs when the healthy recipes are so scrumptious.

This recipe is by Rip Esselstyn and I found it on “Copy Me That”: Badass Banana Bread (Engine 2). I chose to make muffins instead of bread.

BADASS BANANA BREAD (ENGINE 2)

Ingredients

2 cups whole grain flour (1 cup whole wheat + 1 cup oat flour but in the video the Esselstyn’s imply used all oat flour)

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon nutmeg

3 brown-spotted bananas peeled and smashed, 1 1/4 - 1 1/2 cups (I used 4 bananas to get 1 1/2 cups mashed)

1/4 cup 100% pure maple syrup

1/4 cup water

2 Tablespoons unsweetened apple sauce (I didn’t have any so put 1/2 peeled apple in my high speed blender with the 1/4 cup water)

1 Tablespoons vanilla extract

1 teaspoon apple cider vinegar

1/2 cup add-ins of your choice: i.e. walnuts, pistachios, raisins, non-dairy chocolate chips (per request of my daughter I added 70% dark chocolate chips)

Instructions

  1. Preheat oven to 400°F. Line a loaf pan with parchment paper or use non-stick muffin pan. (I lined my muffin pan with parchment paper liners which are awesome!)

  2. In a bowl, combine the flour(s), baking powder, baking soda, cinnamon and nutmeg. In a large bowl, combine the bananas, maple syrup, water, applesauce, vanilla and vinegar. Mix the dry ingredients into the wet. Fold in the add-ins.

  3. Pour the batter into the lined loaf pan (or divide among 12 muffin cups). Bake the loaf for 30 minutes (muffins for 15-18 minutes), until golden brown on top. Serve warm! (I baked muffins for 15 minutes.)
