CRUNCHY SALAD CROUTONS

Thanks to the influence of Dr. Joel Fuhrman, my husband and I have incorporated a lot more salads into our diet. I made croutons spiced with Dr. Michael Greger's seasoning blend but you can use any dried herbs/spices you prefer. My husband really liked them.

Here is the recipe for Dr. Greger's Savory Spice Blend. I didn’t have celery seed so used celery salt.

Crunchy Salad Croutons

Ingredients

4 frozen slices of Sesame Ezekiel Bread or healthy bread of choice

3 Tablespoons of Aquafaba

1/2 teaspoon seasoning of choice

Instructions

  1. Brush both sides of the frozen bread with aquafaba using a pastry brush.

  2. Cut the bread into cubes. Placed the bread cubes in a bowl.

  3. Slowly sprinkle seasoning while tossing so as to coat the bread cubes well.

  4. Spread out the bread cubes onto a parchment paper lined baking sheet.

  5. Bake 400 F degrees for 12-14 minutes tossing half way through or you can bake until desired level of crunchiness.
