BARBECUED KING OYSTER MUSHROOMS
Mushrooms are powerful medicine! This is why Dr. Fuhrman wants people eating some every day. King oyster mushrooms are high in antioxidants, have anti-cancer properties, lower cholesterol and triglyceride levels, have antibacterial activity and are a good source of vitamins and minerals. The king oyster mushroom is known for its meaty texture so makes a good meat substitute when you are trying to transition to a healthier diet. I did not find the dish I made today to be "meaty" but it was tasty. Next time I will try baking it before sautéing on the stove. My husband says he prefers the texture of barbecued jackfruit which is what I usually use when simulating pulled pork. Since finding a healthy bun is a difficult task, I baked potato fries, topped them with the barbecued mushrooms and then added lightly caramelized sweet onions.
Dr. Fuhrman recommends you eat G-BOMBS daily which is an acronym for greens, beans, onions, mushrooms, berries, and seeds.
