FRUIT AND SPICE COOKIES

This recipe from “Forks over Knifes” Fruit & Spice Cookies sounded like a perfect holiday cookie. I enjoyed it more as a breakfast cookie rather than a dessert though others liked it as a snack. It is sweetened with fruit so you can indulge without ruining a healthy diet or feeling guilty.

Here's a 4 minute clip of Dr. Fuhrman on the Dr. Oz show. He explains the difference between how the body responds when you eat processed sugars compared to what happens when you eat fruit.

What I did differently:

-The ingredient list did not list 3/4 cup water but it is mentioned in the instructions and I did add it. Based on the comments, I believe it is best to use a high speed blender rather than a regular food processor for the wet ingredients.

-Once the wet and dry ingredients were combined, I let it sit for about 5 minutes while I chopped the dates/pecans.

-Added about 10-12 chopped dates and a full cup of chopped pecans.
