CARROT AND MAPLE WALNUT SALAD
My neighbor brought me a bouquet of freshly picked carrots from her garden. This simple carrot salad is delicious and super simple to make. Due to the natural sweetness of the carrots I reduced the maple syrup in half and I barely added any salt. The recipe claims 3-4 servings but I say it's just 2! CARROT AND MAPLE WALNUT SALAD
Ingredients
1 1/4 cups grated carrots
1/2 cup chopped walnuts
1/3 cup raisins
2 Tablespoons maple syrup (I reduced to 1 TBSP)
1/4 teaspoon sea salt (I reduced to 1/8 tsp)
Freshly ground pepper
Directions
Combine all of the ingredients together in a medium bowl.
Chill 2 to 4 hours and serve.
