CARROT AND MAPLE WALNUT SALAD

My neighbor brought me a bouquet of freshly picked carrots from her garden. This simple carrot salad is delicious and super simple to make. Due to the natural sweetness of the carrots I reduced the maple syrup in half and I barely added any salt. The recipe claims 3-4 servings but I say it's just 2! The recipe is courtesy of Jazzy Vegetarian on PBS.org.
