GREEN BEANS WITH CRANBERRIES AND PECANS
Usually when I ask my husband what he wants for dinner he says "I don't care." This time he said he would like a baked potato with green beans! These green beans are easy to throw together and taste so good. I will be adding them to my holiday menu list because my husband really liked them.
I was inspired by this recipe from “Tastes of Lizzy T”: Christmas Green Beans with Toasted Pecans.
McDougall corn butter recipe can be found here.
What I did differently:
-Used "McDougall corn butter" instead of animal-based butter
-Instead of honey used 2 teaspoons maple syrup (date syrup would have been healthier but I did not have any)
-Added 1 large clove of garlic, minced
-Used fresh green beans and cooked for about 10 minutes (when they were cooking I added 3 more Tablespoons "McDougall corn butter" and 1/3 cup water about 2/3rd of the way through)
-Did not have pimentos so used 1/4 cup chopped dried cranberries
-Did not add salt or pepper
