MINT CHOCOLATE CHIP NICE CREAM
When I was in medical school my boyfriend and I would eat Breyers Mint Chocolate Chip Ice Cream for a snack whenever we could afford it. Being in our early 20's we didn't pay any attention to the potential detrimental effects of whole milk, added sugar, coconut oil, and soy lecithin! And of course, we didn't learn much about nutrition in medical school unless it involved IV nutrients or supplementing with Ensure shakes. Fortunately, I have learned a lot about whole food, plant-based eating and know I can make a delicious healthy version of mint chocolate chip ice cream easily at home. Thank you to the patient who brought me two bags of fresh mint leaves.

What I did:
In my high speed blender (though you can use a food processor) I combined:
-1 and 1/2 frozen bananas
-2 squares of dark chocolate
-handful of fresh mint leaves
-1 tsp vanilla
-2 TBSP homemade date paste just to see if I liked it but it was not necessary
-small amount of almond milk to smooth the "nice cream" to my liking.
