ROASTED TURNIP AND GARLIC MASH
I have succeeded again in enjoying a food that I used to despise...turnips. I used fresh turnips from the farmer's market which made them extra good.
I was inspired by this recipe from “Further Food”: Mashed Turnips

ROASTED TURNIP AND GARLIC MASH
Ingredients
About 1 1/2 pounds turnips, peeled
4 cloves garlic, peeled
1/8 cup chopped chives
1/4 cup chopped fresh parsley leaves
2 Tablespoons "McDougall corn butter" or preferred vegan butter
1/2 cup nondairy milk (I used homemade oat milk)
1/4 cup nutritional yeast
1/4 teaspoon salt or to taste
1/4 teaspoon pepper or to taste
Instructions
Cut the turnips into wedges.
Place the turnips and garlic on a nonstick cooking tray or line a tray with parchment paper.
I baked at 350 degrees for nearly an hour but you can cook at a higher temperature for shorter amount of time if you prefer.
Place the roasted turnips, garlic, and the rest of the ingredients in a food processor. Mix well to your desired consistency.
