EASY CASHEW CHICKPEAS AND NOODLES
Oh my goodness. This was so delicious that I could not wait to have leftovers for breakfast the next day. My husband also thought it was very good. I considered using a bag of frozen chopped onion/bell pepper mix to make it even faster to prepare but I was not in a big hurry. If you don't like chickpeas change to a different bean.

Why did I opt to use 1/2 cup cashews instead of a full cup and why did I chop them? The cashews definitely added deliciousness to this dish! By chopping them I increased the chance of having a piece end up in each bite. Nuts are however calorie dense and since my husband has weight to lose I wanted less calories in the dish. I could have left the nuts out completely to lower the calories but having a variety of flavors and textures makes the food more satisfying. A satisfied husband is a happier husband who does more chores around the house!

What I did and clarifications:
-My onion was sweet and after dicing measured 1 1/4 cups
-My bell pepper was green and after dicing measured a heaping cup
-Used 1/2 cup roasted cashews and chopped them a bit
-For the sauce I did not have chili garlic sauce so used 1/4 tsp sriracha
-Used 12 oz box of Jovial Organic Brown Rice Penne pasta
