EASY DINNER ROLLS

I found this very simple roll recipe and used the rolls to make sandwiches. It can be difficult to find healthy rolls at the grocery store and even many bakeries want to add oil. I made the Spelt-Oat Rolls and they were a huge success.

Here is the recipe by Brittany Jaroudi at her blog called The Jaroudi Family. If you want to watch Brittany make the rolls, you can watch the video here. If you want to read more about Brittany's plant-based health transformation, you can check our her story: About Me

Here is a reminder about what aquafaba is: What is Aquafaba?

Here are Brittany’s instructions:

Gluten Free Oat Rolls

[Makes 8 Rolls]

2 1/2 cups (320 grams) oat flour

Tip: (pulse your rolled oats in a high speed blender to make a flour)

1/2 teaspoon (2 gram) instant or dry active yeast

1 tablespoon white miso mixed with 1/4 cup hot tap water

1 cup hot tap water (up to 130° F)

2 tbsp seasoning (She added dried chives)

1/4 cup of aquafaba [for browning - use right before baking] (optional)

Extra oat flour for kneading

Spelt-Oat Rolls

[Makes 8 Rolls]

1 1/4 cups (160 grams) oat flour

Tip: (pulse your rolled oats in a high speed blender to make a flour)

1 1/4 cups (160 grams) spelt flour

1/2 teaspoon (2 gram) instant or dry active yeast

1 tablespoon white miso mixed with 1/4 cup hot tap water (to make “miso mixture”)

1 cup hot tap water (up to 130° F)

2 tbsp seasoning (She added dried chives and so did I)

1/4 cup of aquafaba [for browning - use right before baking] (optional)

Extra spelt flour for kneading

Directions:

[Are the same with both roll recipes]

+In a large bowl combine all dry ingredients.

+Mix in miso mixture and hot water.

+Stir all ingredients together until well combined. (I added about an extra 1/4th cup flour.)

+Cover with plastic wrap & let stand on counter top for 3 hours.

+After the three hours place dough onto a WELL floured surface.

+The dough will be sticky and will need extra flour to make workable. (I definitely needed to add more flour.)

+Knead until dough becomes a ball and cut into 8 pieces.

+Make dinner roll shapes with dough and place on a baking pan lined with parchment paper. (I covered them with a towel and let them rest for 30 minutes before baking.)

Optional: Brush a small amount of aquafaba over rolls. [This will give them a nice brown color]

+Bake at 450° F for 25 minutes until golden brown. (I baked for 20 minutes.)
