This recipe for homemade guacamole is so good it is easy to overeat. If you are reducing fat in your diet you may want to try "NOT-SO-FAT GUACAMOLE.” There are also recipes online for Green Pea Guacamole which I have not tried. To make the chips I cut Trader Jose corn tortillas then bake 350 degrees for 18 minutes (adjust depending on how you cut yours and how hot your oven runs).

EASY GUACAMOLE

Ingredients (for single batch)

3 medium to large ripe avocados

2 Tablespoon fresh lime juice

1/2 small red onion, around 1/4 cup finely chopped

10 cherry tomatoes, sliced into quarters (I didn’t have so used 1/2 medium tomato, chopped)

1/4 cup finely chopped cilantro

Sea salt, to taste (I used 1/4 tsp)

Black pepper, to taste (Did not add)

I also added:

1/2 fresh jalapeno, finely chopped

1/4 teaspoon cumin powder

2 cloves garlic, finely minced

Instructions

  1. Slice the avocados into quarters, remove the core, and pull back the peel. Place the flesh into a bowl and mash with a fork.

  2. Add the rest of the ingredients and mix well. Taste and adjust seasonings if desired.

  3. Serve with tortilla chips, sliced raw vegetables or flat breads for dipping.
