EASY MEXICAN RICE

This very easy rice dish could be a meal unto itself or served as a side. I made it to accompany my homemade refried beans. So quick, so tasty.

EASY SPANISH RICE

Ingredients

2 cups uncooked rice

1 3/4 cups low sodium vegetable broth

1 3/4 cups water

1(15 oz) can diced tomatoes

1 small red onion, chopped

1/2 red bell pepper, chopped

1(4 oz) can chopped green chiles

3 Tablespoons chili powder

1 teaspoon cumin powder

1 teaspoon salt or to taste

1/2 teaspoon garlic powder

Instructions

  1. Place 2 cups of your favorite rice into a rice cooker

  2. Add the rest of the ingredients and stir

  3. Add the lid and press start with the setting based on the kind of rice you used
