IRISH SODA BREAD

I had this bread with dinner "in remembrance" on Holy Thursday before Easter. This bread was super easy to make with just 5 ingredients and did not require time to rise.

This Irish Soda Bread is leavened whereas traditional Passover bread is unleavened. Here is an excellent article from "Bob's Red Mill" blog on why Passover bread is not leavened and it also describes various leavening agents: What Is a Leavening Agent?

What I did:

-Used white whole wheat flour. I started with 3 and 3/4 cup then added another 1/4 cup when kneading

-Used unsweetened soy milk instead of oat milk

-Did add salt which is optional

-Dough was very sticky so when shaping it on the baking tray I had my hands powdered with flour

-My shaped dough disc before baking was 1 inch in height

-Baked for 25 minutes
