IRRESISTIBLE SOY CURL "JERKY"
I made a double batch of this "jerky" for my son-in-law to eat while traveling overseas. They were gone before he was mid-Atlantic! He is a vegan Ranger and gets enough protein so you can too on a whole food, plant-based diet! My husband described this snack as "very good" which is high praise given that he is not vegan.

What is tahini? A smooth paste made by grinding sesame seeds. My favorite local brand is Trader Joe's. The store near me seems to move the tahini around so I often have to ask for help to find it!

What I did differently and clarifications:
-Used kitchen scale to measure the soy curls
-Used reduced sodium tamari
-Did not use oil, substituted with 1 TBSP tahini as suggested
-Let my soy curls soak in marinade for 20 minutes. I had about 5 TBSP marinade left at the bottom for my double batch.
-I don't have an air fryer but my gas oven has an air fry feature. I used that feature, 370 degrees, cooked 10 minutes, tossed, cooked another 5 minutes.
