STIR-FRIED GARLIC SCAPES AND NOODLES

I never heard of garlic scapes until my daughter brought some home recently from the co-op. They are the stem and flower bud that grows out of a garlic bulb. They have a more mild flavor than raw garlic. I decided to stir fry mine with broccoli and udon noodles and it was delicious. It's fun to try new foods!

My stir fry sauce was made with:

1/4 cup reduced sodium tamari (or can use soy sauce)

2 dates, pits removed

1/4-1/2 tsp sesame oil (optional)

small piece ginger root

2-3 tsp sake (or can use rice vinegar)

a few buds from the garlic scapes

Puree all ingredients together in a high speed blender until smooth.
