PINEAPPLE COCONUT ENERGY BALLS
These little treasures taste like a virgin pina colada. I was flooded with memories of my honeymoon cruise years ago when I was looking good in a bikini and my pina colada had rum. Although I weigh the same now, some parts have shifted a bit!

On a more serious note, here is Dr. Greger's video about whether canned fruit is as healthy as fresh or dried fruit. The answer is...NO.
What I did differently:
-Processed a heaping packed cup of dates in the food processor before adding other ingredients
-Used crushed pineapple (in juice, not syrup) because I had it on hand. Placed it in a fine strainer and used the back of a spoon to squeeze out as much juice as I could. I still used 1/2 cup of pineapple.
-Added 1/4 tsp vanilla.
