VEGAN "CHICKEN" SALAD
My husband and daughter really liked this "chicken" salad. Me, I am hooked on Cranberry Walnut Chickpea Salad. You need soy curls for this recipe which you can order online.

What I did differently:
-My 1/2 cup of chopped red onion was heaping
-At first my husband said he didn't want bell pepper, then he changed his mind so I added it a bit late
-My chopped celery made 1 cup
-Husband did not want the grapes added
-Used dill pickle relish
-Added 1/2 cup chopped walnuts and 1/2 tsp fresh ground black pepper
-Did not add salt
-In the comment section of the blog post someone said they browned the soy curls in a sauté pan before combining with the salad ingredients. I may try this next time.
-I processed the soy curls in a food processor for about 20-30 seconds rather than chopping them.
