CRANBERRY COCONUT OATMEAL COOKIES
These cookies have some of my favorite cookie ingredients: cranberries, walnuts, and coconut. So very delicious and a great holiday treat. Impress your friends by using a special ingredient in place of coconut oil. In case you have not seen the picture of Santa since changing to a plant-based diet, I have included his picture. Santa will truly appreciate these cookies!

What I did differently:
-In place of coconut oil, used 1/3 cup ripe, mashed avocado
-Combined the maple syrup, applesauce, avocado, and vanilla in a high speed blender until smooth
-My lemon zest was a heaping TBSP since I enjoy the taste
-Used cranberries with 50% less sugar and chopped them
-Added 1/2 cup chopped walnuts
-Used my hands to roll 22 balls, then used the bottom of a glass covered with plastic wrap to flatten the balls
-Baked at 340 degrees for 17 minutes (to account for the moisture content of the avocado according to a cooking blog)
