MONGOLIAN SOY CURLS
I made this for dinner tonight and it was terrific. I significantly lowered the red pepper flakes but it was still a bit too spicy for my husband though perfectly spicy for me. We devoured the whole tray of roasted broccoli and soy curls.
You can find the original recipe at “V Nutrition”: MONGOLIAN SOY CURLS
Here is the Butler Foods website where you can learn about soy curls and order. My husband who is not vegan loves soy curls!
I purchase organic rice grown in either California or India. Read this short article about arsenic in rice: Arsenic And You
What I did differently and clarifications:
-Used 4 ounces dehydrated soy curls
-Did not use oil
-Doubled the sauce, which I highly recommend
-Used reduced sodium tamari and my vegetable broth was reduced sodium
-Lowered the red pepper flakes to 1 tsp for a single batch (when tasting the sauce in the pot it seemed very spicy but once on the broccoli/soy curls it was fine for me)
-Lined my baking tray with parchment paper. Roasted broccoli florets at the same time as baking the soy curls. Baked 20 minutes.
-Tossed my portion in a bowl with some sauce. My husband diluted his sauce with some bottled teriyaki sauce so tossed his separately.
-Served over organic white rice which my husband prefers
