OATMEAL CREAM PIES

When I was a kid I liked Little Debbie Oatmeal Cream Pies. I felt special sharing the same name! Little did I know back then what unhealthy ingredients those delicious cream pies contained. No worries with this healthy version!

What I did differently for the oatmeal cookies:

-Used quick oats

-Instead of coconut oil used 1/2 cup mashed avocado

-Instead of coconut sugar used 1/3 cup maple syrup

-Increased almond milk to a total of 4 TBSP

-Used blanched almond flour

-Reduced salt to just a pinch

What I did differently for the cream filling:

-Reduced apple cider vinegar to 2 tsp

-Add 1 pitted Medjool date, soaked in hot water for 20 minutes then drained

-Increased vanilla by 1/4th tsp

What I did differently for the instructions:

-Lined 2 baking sheets with parchment paper

-Put dry ingredients into a bowl

-In high speed blender added the avocado, maple syrup, vanilla, almond milk, and molasses

-Added the wet ingredients to the dry ingredients and stirred well

-Used 2 TBSP of dough, dropped onto the cookie sheet and used my finger to shape into a flat circle. They did not spread further when baking. Mine were about 3 inches across.

-Baked 12 minutes then placed on cooling rack

-I made 6 pies. I had lots of extra cream filling so next time will make 1/2 batch of the filling
