FIG AND CRANBERRY NO BAKE ENERGY BITES
Here is wonderful snack I made for my daughter's car trip so she would not be tempted to buy snacks at a convenience store. What a deliciously sneaky way to get figs and oatmeal into people!
You can find the recipe at “Bowl Me Over”: Fig and Cranberry No Bake Energy Bites.
Interesting fig facts:
-The fig fruit is actually an inverted flower.
-Figs are believed to be the oldest cultivated tree for human food.
Here is a 3 minute video by Dr. Greger about fruit/nut bars: "Do Fruit & Nut Bars Cause Weight Gain?"
What I did differently:
-Reduced salt to 1/16th teaspoon
-The instructions omitted the addition of the cranberries which you are supposed to add at the same time as the figs to the food processor
-I added the oatmeal at the end to the food processor rather than stirring them in because I wanted the oat flakes to be smaller
-Used a spoon to measure out the amount per ball because I do not own a small ice cream scoop
