PECAN BUTTER CHOCOLATE CHIP COOKIES
These cookies are incredibly delicious! It's a bit of extra work to make the pecan butter but it is so worth it. I have made these with walnut butter and they are equally wonderful.
The recipe is by Brandi at “The Vegan 8”: Vegan Pecan Butter Chocolate Chip Cookies. All of her recipes use 8 ingredients or less, not counting salt, pepper or water. She does not have advertising on her site so annoying ads and videos won’t pop up.

Becauses Brandi does not use advertising, I want people to visit her blog for the recipe. I did not need to do anything differently but here is some clarification about what I did do:
-Used Himalayan salt instead of sea salt
-Used 70% dark chocolate chips
-Using 3 cups of raw pecan halves made for me about 1 1/2 cups of pecan butter
-There were lots of chocolate chips, so many that they wanted to fall out of the dough as I was forming the cookies. Next time I may lower the amount just a bit.
-I made 15 cookies, each weighing 1.3-1.5 ounces. They don't spread much at all during baking.
