PECAN PIE TARTLETS
These tiny treats are AMAZING and belong on your Thanksgiving line-up! They could not be easier to make with only 3 ingredients and no baking required. My good friend Laura loves pecan pie and could not get over how much these tartlets taste like the pie she used to eat. With this recipe you can have the enjoyment without the unhealthy sugar, eggs, butter, and corn syrup typically found in traditional pecan pies.

What I did and special notes:
-You MUST use Medjool dates
-To make the parchment paper easier to use, crinkle your piece of parchment paper repeatedly a few times then cut into strips.
-When measuring the dates for the pecan filling, I did not pack the cup. I used 12 dates (10 oz)
-You may not have to add extra water to the pecan filling
-When you drain the soaked dates, save the water and use it to sweeten something else
-I spooned the filling into the crust
-I had some left over pecan filling which made a nice dip for sliced apples
