QUINOA CORNBREAD

There is nothing like a good piece of cornbread when eating soup. This cornbread is made with dates but is not very sweet. If you like sweet cornbread you might want to add a few more dates. My husband, staff, and I really liked the flavor and texture of this muffin.

The most common types of quinoa you will find at the store are white, red, black, and tri-color (all 3 colors mixed). Most quinoa is washed before packaging to remove the bitter natural coating called saponin. If the product does not say it is pre-washed, then rinse it well to remove the saponin.

What I did differently:

-Cooked white quinoa for about 12 minutes

-Used 5 pitted Medjool dates

-Made 12 muffins and baked 20 minutes
