RIP’S OATMEAL-RAISIN CHOCOLATE CHIP COOKIES

These sweet cookies are delightfully crispy and have healthier ingredients compared to typical chocolate chip cookies. Super easy to make, using just one bowl. They are a delicious treat to be enjoyed on special occasions.

This recipe is from Rip Esselstyn's Engine 2 cookbook. His father is Caldwell Esselstyn MD who started the Heart Disease Reversal Program at the Cleveland Clinic. Reversing disease requires a more strict diet compared to preventing disease so Rip Esselstyn's program allows some ingredients that his father's program does not.

Rip’s Oatmeal-Raisin Chocolate Chip Cookies

Ingredients:

3/4 cup oat flour (I grind my own by placing rolled oats in my high speed blender.)

1/4 cup old fashioned oats (Can use rolled oats or quick oats, whichever you prefer)

1/4 cup pure maple syrup

1/4 cup almond butter (or can substitute peanut butter or cashew butter)

1 Tablespoon ground flax seed

1 and 1/2 teaspoons vanilla extract

1/4 cup raisins

1/4 cup non-dairy dark chocolate chips or 1.5 ounces finely chopped dark chocolate bar

Directions:

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone mat.

  2. In a large bowl stir together all of the ingredients until a dough forms.

  3. Scoop about 2 tablespoons of dough at a time and roll into balls.

  4. If you prefer you can flatten the balls with your hand or the bottom of a glass covered with plastic wrap.

  5. Bake for 12-15 minutes until golden brown on the edges. Transfer to cooling rack.
