SOUTHWEST PASTA SALAD
This recipe will knock your southwest socks off. My daughter brought it to a family cookout and gave me leftovers. It is so delicious that besides eating it at our cookout, I had it for supper that night and again for breakfast the next morning! The recipe is from Plays Well With Butter and is already compliant. My daughter only changed a few things to use the ingredients she had on hand.
The cookout was my first time meeting Dottie, my son's new pet pig. She was a rescue and had been neglected. She was so adorable and kindly ate our scraps! See below for some interesting information about pigs.

-Instead of whole wheat pasta she used Veggie Rotini
-Used chopped regular tomatoes instead of cherry tomatoes
-Used green bell pepper instead of red
-Replaced black beans with pinto beans
-Her corn was regular, not fire-roasted
