SWEET POTATO COOKIES

You don't have to like sweet potatoes to enjoy these delicious cookies. My friend Laura liked eating the dough best!

What I did:

-Used a Japanese sweet potato

-Reduced maple syrup to 1/4 cup

-Chose almond butter instead of peanut butter

-Reduced nutmeg to 1/4 tsp

-Reduced salt to just a dash

-Used quick oats instead of regular rolled oats

-Added the optional baking soda

-Instead of optional pumpkin seeds added 1/2 cup chopped raw pecans

-Used a glass with bottom covered with piece of plastic wrap to press down the dough of each cookie

-I used a heaping 1 TBSP measuring spoon to divide the dough and made 17 cookies. My cookies were not "fragile" when I removed them from the oven so moved them immediately to a cooling rack.
