VEGAN CINCINNATI CHILI
I have not had Skyline Chili but my friend who sent me this recipe says the flavor in this chili is similar to the original. It is easy to make if you have the spices on hand.
You can find the recipe at “Oh My Veggies”: Vegan Cincinnati Chili.
Here's an article by Dr. Axe about the health benefits of lentils.
Lentils:
-great source of fiber
-protects heart health
-improves digestive health
-helps regulate blood sugar levels
-high source of protein
-can help with weight loss
-improves immunity
What I did differently:
-Did not use oil. Dry sauteed the onion
-I made several other changes like adding garlic and some canned diced tomatoes but this may have changed the authentic taste so according to my friend, just make it as the recipe calls for, minus the oil.
The Story of Skyline Chili from their web page:
"From a small kitchen in the village of Kastoria, Greece, a fascinated young Nicholas Lambrinides watched as his mother and grandmother prepared authentic Greek dishes. Their recipes had been passed down from generation to generation. These were unique, wonderful dishes that had the power to bring his whole family together. Nicholas dreamed that one day he would bring these recipes and traditions to America, where he could share them with friends and family. In 1949, his dream came true when Nicholas opened his first restaurant overlooking the skyline of Cincinnati, Ohio and began serving his delicious secret recipes to appreciative customers."
