TASTY BREAKFAST "SAUSAGES"

I love vegan "sausage" biscuits. Here are two super tasty options that are sure to help you transition away from unhealthy meat sausages.

Below is my family’s favorite recipe which is easy and delicious. The recipe uses tofu and was shared on Facebook.

Breakfast Tofu Sausage

1 package extra firm tofu, drained

1/4 cup nutritional yeast

2 TBSP soy sauce (I used reduced sodium tamari)

2 tsp rubbed sage

1/4 tsp dried thyme

1 1/2 tsp onion powder

1 tsp garlic powder

1/2 tsp smoked paprika

1 tsp red pepper flakes or 1/8 tsp cayenne pepper

2 tsp fennel seeds (I used 1/2 tsp ground fennel seeds)

Preheat oven to 400F. Line a baking tray with parchment paper or silpat mat. Add all the ingredients to a food processor and pulse until smooth. Taste batter and adjust seasonings if desired. Batter will be sticky but will firm when baked. Use a cookie scoop or your hands to form the batter into small balls (I made 9 large sausages). Place the balls on the baking tray and flatten. Bake 30-40 minutes or until golden brown. Julie used her air fryer to reheat them the next morning, 400 degrees for 3-6 minutes.
