"SAUSAGE" MUSHROOM PASTA

This dish is mind-tripping because it tastes like there is sausage in it but there isn't. My husband, my staff, and I all loved it! This recipe is wonderful and so easy to prepare.

Here is information about Einkorn wheat, the oldest wheat known to scientists. My favorite wheat pasta is Einkorn because of its flavor and texture. I bought mine at the Good Foods Co-op.

What I did:

-Used a sweet onion and 2 large cloves of garlic. I finely chopped them in my food processor.

-Did not add tahini

-Used a 15 oz can of unsalted brown lentils, drained and rinsed

-Used a 12 oz box of Jovial organic Einkorn penne rigate pasta

-For the spice mix reduced salt to 1/4th tsp using ground Himalayan salt and increased the black pepper to 1/4th tsp.

-Used this recipe for vegan Parmesan cheese from “Minimalist Baker” : Vegan Parmesan Cheese.
