SWEET (POTATO) MONSTER FOR BREAKFAST

Sweet potatoes make such a healthy and filling breakfast. Studies show that even people with diabetes can improve glucose control by eating sweet potatoes. For fun, try a purple sweet potato! Although they are great plain, you can mash a baked sweet potato and add some cinnamon, non-dairy milk, nuts and fruit to suit your own tastes. I also add ground flaxseed for the nutritional boost. Have fun with it. You can eat the skins if you like as they are very nutritious; I share them with my dogs who love them.

I bought my Stokes Purple sweet potato at the Good Foods Co-op. Since buying a new type of sweet potato can be a bit intimidating, I made a chart to explain some of the differences.
