I got home from work tonight and found my husband in the kitchen preparing this stew. The house smelled divine! It's the best stew I have ever had, including ones I ate years ago that contained beef. Since my husband is still transitioning his diet, he added a meat substitute but really it would be tasty and healthier without it. This stew is sure to please your entire family, especially on these very cold Kentucky days.

What is seitan? A meat substitute made with wheat gluten.

What is TVP? An abbreviation for "Textured Vegetable Protein," a brand name for a highly processed soy protein used to make meat substitutes.

What he did differently because of ingredients he had on hand:

-Added an 11.2 oz bottle of Guinness beer instead of red wine

-Used bulgar instead of millet

What I would recommend:

-It was a bit too salty for my taste so I suggest not adding the salt and letting people salt their own personal bowls

-Don't add the seitan or TVP
