WALNUT VINAIGRETTE SALAD DRESSING
I have a patient who raves about this salad dressing by Dr. Joel Fuhrman. It is a nice, tasty change from my usual dressing of balsamic vinegar alone.
DR. FUHRMAN’S NO-OIL WALNUT VINAIGRETTE DRESSING is featured on the “Hello Nutritarian” blog. A Nutritarian diet “emphasizes eating high-nutrient, whole plant foods that supply abundant amounts of micronutrients” as described on Dr. Fuhrman’s webpage.
How do I choose a Balsamic Vinegar of Modena? Here is what I do since I am seeking an inexpensive yet tasty product. First I look at the ingredients. I want the first to be "grape must" and the second to be red wine vinegar. I don't want any other added ingredients. Next I look for the PGI seal (Protected Geographic Indication) which is proof of the link to Modena, Italy based on European regulations. For those of you who can afford an expensive, higher quality product, look for the only ingredient to be "grape must," the word "traditional" in the name, and the PDO seal (Protected Destination of Origin.)

Ingredients
1/2 cup water
1/4 cup balsamic vinegar
1/4 cup chopped walnuts
1/4 cup raisins
1 clove garlic or substitute 1 teaspoon garlic powder
1 teaspoon prepared Dijon mustard
1/4 teaspoon dried thyme
Instructions
Combine all ingredients in a high-speed blender until smooth.
