1-POT EVERYDAY LENTIL SOUP

Lentils are an awesome legume to try. They are versatile, easy to prepare, and don't need soaking. This soup is wonderfully satisfying and great for winter days. I am actually in Florida where it is sunny and in the 70's but I had to make this for my sister who had never had lentils!

What I did differently:

-Did not add water or oil since did not saute the vegetables

-Used 1/2 red onion, chopped, instead of shallots

-Did not add extra salt

-Used 8 cups of vegetable broth, not just 4

-Did not have fresh herbs so added heaping teaspoon dried thyme

-Used green lentils

-Added a bay leaf

-Used mixture of baby kale and baby spinach

-Cooked everything in a crock pot except added the leafy greens at the end and cooked for just a few minutes longer until wilted
