5-MINUTE GAME CHANGER “CHEESE” SAUCE
This is one of the best vegan nacho “cheeses” I have made. Don’t tell your family and friends that it is healthy and dairy free and see if they even notice!
Jill McKeever of the recipe blog “Simple Daily Recipes” outdid herself with this non-dairy "cheese" recipe. The name is not an exaggeration! You can watch her make the “cheese” sauce in this video.

5-MINUTE GAME CHANGER CHEESE SAUCE
Ingredients
2 cups rolled oats
1/2 cup nutritional yeast flakes
1/4 cup cornstarch
2 teaspoons onion granules (I used 1 tsp onion powder)
2 teaspoons sea salt
1 (12-oz) jar Roasted Red Bell Peppers in water
1 Tablespoon fresh lemon juice
1/4 teaspoon Pecan or Apple Liquid Smoke (I used Hickory Liquid Smoke since local stores did not have Pecan or Apple)
4 cups warm water
Instructions
Place all of the ingredients into a high speed blender that has the ability to cook food. Blend on high for 5 minutes or until sauce begins to thicken. (With the Vitamix I use I could hear the motor slow down and the sound deepen as the sauce got thick enough.)
Once thickening has begun, stop the blender and quickly transfer to a large container that holds at least 6 cups. The cheese sauce will continue to thicken as it cools even slightly.
