HEALTHY BAKED BEANS
I am so excited to share this fabulous baked bean recipe from “The Simple Veganista” with you. They are not actually baked, rather you make them in an Instant Pot or Crock-Pot. My husband is a huge baked bean fan and loved these! I enjoyed mine with baked potato fries and dandelion greens but he just ate a big bowl of beans for supper.
In Dr. Fuhrman's book "The End of Diabetes” he writes about the benefits of eating beans and greens:
1. Lowers cholesterol and triglycerides
2. Sensation of fullness leads to meal satisfaction even though fewer calories are consumed
3. Lowers glucose level and improves insulin sensitivity which aids in the reversal of diabetes
4. Promotes the "good" bacteria in the gut and suppresses the "bad" bacteria
5. Improves bowel regularity, preventing constipation
6. Helps remove cholesterol and other unhealthful fats
7. Store less fat after meals
8. Increase fat breakdown
9. Delays hunger and promotes lower calorie intake
10. Protects against colon cancer

What I did differently:
-Used 2 small onions instead of 1 medium since it is what I had
-Used navy beans
-Vegetable broth was not low sodium so I did not add salt later
-Used whole grain mustard
-I cooked in my Instant Pot as described but they were not quite done after 65 minutes so I cooked them for another 10 minutes
