EASY TWO INGREDIENT WAFFLES

Patients are often asking me for easy recipes. Well, a healthy and delicious waffle recipe doesn't get any easier than this.

My usual breakfast is oat groats with fruit. This waffle, using more processed oats, is an occasional treat. The more processed the oat, the higher the glycemic index and the higher the insulin spike. Dr. Greger explains the effects of oat processing in this video.

What I did differently for a half batch:

-Used organic quick oats

-To the water and banana I initially added only 1 cup of the oats. Pulsed in high speed blender very briefly. Then stirred in remaining 1/2 cup quick oats and let it sit to thicken for 8 minutes. A half batch was supposed to yield 4 waffles but it only made 3.

-Added 1/2 tsp vanilla extract

-Be sure your waffle iron is non-stick and hot enough. Cook the waffle sufficiently so it does not stick.

-Topped with banana slices, blueberries, and cinnamon. Used a couple of teaspoons of maple syrup for dipping.
