AMAZINGLY DELICIOUS SOY CURLS

You will believe that this recipe is awesome since I am letting you know that I ate nearly an entire double batch soon after taking them out of the oven. I then had to make more so my husband could have enough for his meal. In the past month I have made these on 4 separate occasions because I enjoy them so much. The first time I put them in my salad but my favorite way is to eat them with vegan mashed potatoes and mushroom gravy.

The salad dressing that I love is called "Very Benevolent Caesar Salad" dressing. It is so good that it compels me to eat a huge salad for dinner at least once a week.

Classic Caesar salad dressing has unhealthy ingredients including mayonnaise (or egg and oil), Parmesan cheese, and anchovies. Anchovies and other fish are high in environmental toxins. Here is one article from the "Journal of Food Protection" about the heavy metals in anchovies.

What I did:

-Used reduced sodium vegetable broth made with warm water and broth base concentrate

-After soaking the dry soy curls in the warm broth for 10 minutes, squeezed out the excess liquid (kept the liquid to use when making another batch)

-While the soy curls were soaking, combined the dried ingredients in a small bowl

-Tossed the rehydrated squeezed soy curls with the spice mix

-Spread the spiced soy curls on a baking sheet lined with parchment paper

-Cooked in my Breville oven set on Airfry 425 degrees for 9 minutes. Tossed once when half way through.

-Did not use oil since did not cook in a skillet
