VERY BENEVOLENT CAESAR SALAD with HERB AND GARLIC CROUTONS

WOW is this good! I think this dressing is better than the original Caesar dressing and is certainly healthier! I was given a free container of mixed greens that had spinach, mizuna, chard, and kale so used that instead of romaine lettuce. Since my first experience, I have made this dressing dozens of times, adding the ingredients to a small mason jar and shaking to combine. Super easy, super delicious.

What I did differently for the croutons:

-Did not have stale bread so cubed several frozen slices of Ezekiel Sesame bread

-Used 1 tsp of garlic powder instead of minced garlic

-Processed spices in my high speed blender to make them fine so would stick better to the bread cubes

-Baked 35 minutes

I topped my salad with vegan Parmesan. Here is the recipe I use from “Minimalist Baker.”
