SERIOUSLY ADDICTING SWEET POTATO BURRITOS

It's so awesome when you make a recipe thinking it is going to be good and it ends up being great! That was this recipe for me. I overindulged and ate 2 burritos, justifying to myself that the tortillas were small! I was full but happy!!

The recipe is by Chuck Underwood at the whole food, plant-based recipe blog “Brand New Vegan”: SERIOUSLY ADDICTING SWEET POTATO BURRITOS. When he first posted the recipe several years ago it included some oil but he has since gone oil-free. The original recipe called for 2 TBSP salsa but his updated recipe calls for 1 TBSP. The only thing I did differently was that I added some corn, cut off the cob, that I had left over in my fridge and I roasted the vegetables for 30 minutes.
