BIG MAC SALAD

My husband is not vegan and prefers iceberg lettuce in his salads so he gave this salad a definite thumbs up. I put in too much lettuce which threw off the "Big Mac" illusion so next time will reduce it. Ingenious concept by "Monkey and Me Kitchen Adventures" for those vegans missing that terribly unhealthy Big Mac at McDonald's.

The only thing I did differently was reduce the salt to 1/4 tsp in the dressing and use a 15 oz can of lentils which had no added sodium. I want to clarify that for the dressing, “ground mustard” is powdered mustard, not prepared mustard.
