SUPERFOOD CHOCOLATE CHIP COOKIES

Easy. Healthy. Delicious. The cookie name and recipe are from “T. Colin Campbell Center for Nutrition Studies.” The term "superfood" is not regulated but is used to describe a food that is really high in nutrients. In this cookie "superfood" could refer to the goji berries, ground flax, dates, oats and cacao nibs. What makes someone healthier is not one particular "superfood" in their diet rather it's the quality of their overall diet.

What I did differently and clarifications:

-Used homemade cashew milk sweetened with dates instead of soy milk

-Used 8 large pitted Medjool dates

-Oats were regular rolled oats

-Did not have goji berries so instead added 1/4 cup shredded unsweetened coconut and 1/4 cup hemp seed hearts

-Nibs are cacao nibs

-Processed the dates first, then added the rest of the ingredients except for the cacao nibs. Processed to make dough. Added cacao nibs then pulsed a few times to distribute in the dough. Made half the batch as drop cookies and the other half I flattened. Made 29 cookies. Drop cookies baked 18 minutes and flattened cookies baked 15 minutes.
