AFRICAN PEANUT STEW

My husband walked into the kitchen yesterday with a bag of sweet potatoes, not realizing we still have some left from the bag he bought last week. Once again, "Monkey and Me Kitchen Adventures" saves the day with a delicious recipe full of flavor and healthy ingredients: African Peanut Stew.

What I did differently:

-Used a sweet onion

-Dissolved the flour in a bit of hot vegetable broth before adding

-Baked the sweet potatoes until nearly done, then peeled and cubed because I find it difficult to cut raw sweet potatoes plus I like the flavor of baked. I would have left the skins on but my 4 dogs love them and were staring me down!

-Used reduced sodium vegetable broth, 4 cups and no water

-Did not have fresh greens so used 2 cups of frozen chopped spinach

-Added the cooked potatoes and the frozen spinach towards the very end of cooking

-For the spice mix I did not have sweet paprika so left it out, used 1 tsp dried coriander, did not add extra salt, increased black pepper to 1/2 tsp, and reduced the cayenne pepper to 1/8th tsp
