AVOCADO SPINACH WRAPS (FLATBREADS)
You must make these soft, delicious flatbreads as soon as possible! They are amazing and fold up perfectly for wraps. I used them to make "BLTs" with homemade tofu "bacon." Your options are endless so create your own deliciousness.

Avocado Spinach Wraps (Flatbreads)
Ingredients
3 avocados with peel and pit removed, mashed (after mashing mine weighed 13 ounces)
1/2 packed cup spinach which has had stems removed, chopped
2 large cloves garlic, minced
2 Tablespoons fresh lemon juice
1 teaspoon salt
2 cups whole wheat flour (I used white whole wheat and due to the amount of avocado ended up adding another 1/4th cup)
Instructions
In a large bowl add avocado, spinach, garlic, lemon juice, and salt. Mix to combine well.
Use a sifter to add 1 1/2 cups of the flour to the avocado mixture. You can use a spatula to begin the mixing process if you want, then use your hands to knead, adding the rest of the flour until a soft dough is produced.
Cover the bowl with a towel and let it rest for 10 minutes.
Place the dough on a floured clean surface. Cut the dough in half and roll into a log shape. Cut each log into 5 equal pieces and form a small ball.
Work one piece of dough at a time. Sprinkle the ball with flour to prevent sticking and flatten it with your fingers. Roll into a flat circle using a rolling pin.
Heat a non-stick frying pan to medium-high heat. Place the flatbread in the pan and cook 1-2 minutes until light brown spots develop on bottom. Flip and cook the other side 1-2 minutes. Remove and place on a paper towel. Repeat process for each flatbread. My pan got too hot by the 2nd or 3rd bread so I cooked remainder over medium heat. After every couple of breads I removed any loose flour from the pan if necessary.
