QUINOA FLATBREADS
Making delicious flatbreads doesn't get much easier than this as long as you have a high speed blender. I enjoyed this bread as a snack but you could serve it alongside soup, use as a pizza crust or use in other ways. The options are endless so create them to suit your taste. My husband does not like quinoa but really liked these breads.

Quinoa is an excellent protein source. It is also one of the foods, along with others like buckwheat and soybeans, that contains all of our "essential" amino acids. "Essential" amino acids are those that we must obtain from food because our bodies cannot make them on their own. Amino acids are the "building blocks" for our own muscles and are important for many other processes in the body. Quinoa Flatbreads
Ingredients
1 cup uncooked quinoa
1/2 cup unsweetened plain plant milk
1 teaspoon baking powder
3/4 teaspoon sea salt
I also added 2 Tablespoons nutritional yeast and 1 teaspoon garlic powder but see original link for other ideas.
Instructions
Preheat the oven to 425F degrees.
Line a 14 x 20 baking sheet with parchment paper. Invert the parchment paper and trace an 11-inch diameter circle in the center of the parchment paper to use as a pouring guide. (I traced a glass pie dish.) Flip the parchment paper over and place onto the baking sheet. You should be able to see the circle from the other side.
Place the quinoa in a fine mesh strainer and rinse it really well with running water for two minutes. Shake to drain excess moisture.
Add the rinsed quinoa and all other ingredients into a high-speed blender. I used the small “dry container” of a Vitamix. Blend on high for 2 minutes. The batter should be smooth and thick but pourable. If too thick, add a teaspoon of plant milk.
Use a spatula to get the batter onto the center of the circle on the parchment lined baking sheet. Spread out the batter to form a circle.
Bake in oven for 15 minutes. Remove the flatbread from the oven. Using a thin edged spatula, loosen the bread from the parchment paper, flip over, and return to the oven. For a chewy bread bake another 4 to 5 minutes. For crispy bread bake another 6 to 7 minutes.
