AWESOME BUFFALO POTATO SKINS

These delicious potatoes will make a great snack or a satisfying meal. Vegans and non-vegans alike will rave about them. My non-vegan husband loved them. A quick reheat the next day and they were still delish. I love being a whole food, plant-based vegan because I get to eat a lot of delicious food. The plate in the picture holding 4 potato skins...I ate all that plus two more!

What I did differently and clarifications:

-Used the potatoes I had on hand to approximately equal what the recipe called for. My 7 potatoes weighed 648 grams (1 lb 7oz). I don't have an air fryer so baked them in the oven.

-I buy the 12 pound bulk box of Butler Soy Curls and keep them in my freezer. There are always small broken pieces at the bottom of the box so I used those rather than shredding larger pieces.

-Rehydrated soy curls using 1 1/2 cups hot water + 2 tsp vegan chicken flavored broth powder

-Did not use oil

-My onion was sweet, chopped it, measured 1/2 cup (65 grams)

-Added 2 cloves garlic, minced and added when cooking the onions. When cooking and they started to stick to the pan added a splash of water to release them.

-Used Frank's Hot Sauce instead of Primal Kitchen product

-Used cashew cream (in high speed blender combined 1/2 cup water with 1/4 cup cashews)

-Added the sliced green onion (scallion) when adding the mashed potatoes because I prefer them raw

-Added 2 TBSP nutritional yeast when adding the hot sauce

-Baked the unfilled potato skins in my oven using the "air fry" feature, 425 degrees, flipped them over after 10 minutes

-Because my husband was late getting home from work, instead of broiling them I put them back in the oven on "air fry" mode for 7 minutes to heat them thoroughly

-For garnish did not have guacamole so used chunks of avocado. I love scallions and pickled jalapenos so definitely added those.
